The apparently simple preparation of this dish —consisting of a portion of maize dough mixed with other ingredients such as iguana, shrimp, beans or fish, and later wrapped in a corn or banana leaf, and steamed—, required the development of instruments such as stone scrapers to remove corn kernels; pichanchas or clay pots with perforations to rinse the nixtamal; to grind the grain, metates; and to cook the dough, pots that resisted the heat, and lids. 

The nixtamalization, grinding, kneading, wrapping and cooking techniques that these cultures learned to dominate, are practically the same ones that continue to this day, proving the effectiveness of Mesoamerican ingenuity.

After this interesting introduction to the origin of tamales, we invite you to take a tour through the different regions of Mexico to prepare your palate and learn more about this delicious dish, of which there are about 370 varieties, and that gives identity to our country.

NORTH

Wrapped in dry corn husk, or totomoxtle, tamales from the northern region are prepared in smaller portions compared to others, which is why they are known as “finger” tamales in Nuevo León, and they are also popular in Chihuahua, Coahuila and Durango. They are usually filled with shredded meat, machaca (dried meat) or asadero cheese and are seasoned with dried chilies.

HUASTECA

In this vibrant region shared by the states of Veracruz, San Luis Potosí, Tamaulipas and Hidalgo, tamales take on a different proportion. The delicious zacahuiles can measure up to 5 meters (16.5 feet) and are cooked for approximately 10 to 12 hours in a texcal, an oven set under the ground with firewood and hot stones. This dish made with crushed corn dough, turkey meat or pork seasoned with chino and cascabel chillies sauce, and wrapped in banana leaf. This tamale is served in large celebrations. 

OAXACA

The Oaxacan version of the tamales is wrapped in a banana leaf and the dough is flavored with acuyo or holy leaf (pepperleaf). The most common fillings are black or yellow mole, pork in red sauce, and rajas (sliced poblano pepper).

In the Mixteca area it is common to find sweet cocoa tamales, wrapped in a corn husk for cooking, and bathed in a cocoa shell sauce that adds a bit of acidity to create a contrast of flavors.

In the central valleys of the region you can often find tamales de piedra (stone tamales). The dough is mixed with beans and wrapped in avocado leaves.

On the coasts of Oaxaca you can find tamales de tichinda, a river mussel, seasoned with red chile sauce, a recipe shared with its neighboring state, Guerrero.

MICHOACÁN

One of the states with the greatest diversity of tamale recipes is Michoacán. The Canarian tamale from Zitácuaro is made with rice flour to which almonds are sometimes added, and the lard is substituted with butter.

Pátzcuaro’s uchepos are made with tender corn dough and are fluffier, accompanied by sour cream, cotija aged cheese and green sauce.

The corundas are perhaps the best known, and they are wrapped in a banana leaf giving a triangular shape to this version of the tamale. They are not usually stuffed, but you can find them with chilaca pepper slices or green sauce, pork and purslane.

SOUTHEAST

Yucatan tamales are filled with cochinita pibil and wrapped in a banana leaf. They are accompanied by habanero pepper and pickled red onion.

In Chiapas, the cambray tamales are the most popular, and are offered as a great feast at all celebrations. They are made with shredded chicken, prunes, raisins, fried banana, olives, bell pepper, and almonds.

Another Chiapas favorite is the chiltepin tamale, a very common plant in southeastern Mexico and Central America that gives a delicious flavor to the dough. They are filled with chicken or shrimps and cooked wrapped in a banana leaf.

The pejelagarto or tropical gar, is always present in the kitchen of Tabasco, and it could not be left out of the tamale recipes of this state. You can also find the chanchamitos, seasoned with axiote or annatto, and tamales made with strained dough to give a smoother texture.

CENTRAL ZONE

With many shared recipes, in the states of Tlaxcala and Puebla, ayocote tamales (a Mexican bean up to 2 centimeters long) await you. They are accompanied by pipián, a sauce dating from the pre-Hispanic era made with tomatoes and pumpkin seeds. During its cooking, they are wrapped in totomoxtle.

In the center of Tlaxcala, anise tamales are served at large parties as an accompaniment to the main dish, mole con pollo, to collect every last drop that remains on the plate.

The cuisine of the Bajío (lowlands) region, which has great influence from the center and Michoacán, includes tamales muertos in its recipe book, made with blue corn dough and wrapped in corn husk, filled with mole, rajas or pork meat.

In Mexico City, it is very common to find a stall of mole tamales filled with green sauce and chicken, rajas with cheese and sweet, wrapped in corn husk, and a proper supply of bolillos (a typical Mexican bread) to prepare the famous guajolotas, which are nothing more than the tamale placed in the middle of the bread.

THE GULF

In the port of Veracruz you will find ranch tamales, whose dough is flavored with holy leaf and then filled with pork or chicken seasoned with morita chile.

In the town of Tepetzintla they prepare them with beans cooked with chicharrón (pork rinds) and coriander and are wrapped in papatla leaf, similar to the plantain leaf but smaller, and widely used in the region.

THE PACIFIC AND SEA OF CORTEZ

In the states of Colima, Jalisco, Nayarit, Sinaloa and the south of Durango they prepare a tamale made with corn dough nixtamalized with wood ash, mainly oak.

In Sinaloa they cook the pork tamale with lard, potatoes, olives and a mixture of chilies, they can also be stuffed with chilorio (a dish made of pork fried in chile sauce) or shredded beef. Other typically Sinaloan varieties are the tamales tontos or silly tamales, made only from dough without any filling; and the tamales barbones or bearded tamales, very typical of the coastal city of Escuinapa, prepared with shrimp with the head and the ‘beards’ coming out of the tamale.

Sonoran tamales are thinner and medium in size. The dough is filled with carrots, peas and pork, beef or chicken seasoned with guajillo chile, which gives a red color to the corn husks in which they are wrapped.

Consequently, the term “Olla a la mexicana” was created, evolving to “mole de olla” (pot mole) over the years. Even though this meal became popular in Mexico City, the recipe depends on every family, as some include beef shank, oxtail, pork backbone, chicken, rabbit, or even no meat included. 

How to prepare pot mole 

As you can see, cooking pot mole may be a complicated process as it takes time to prepare the sauce. This is one of the reasons Mexicans really appreciate this mouthwatering meal. 

However, there is an option that makes it easier to prepare pot mole at home. Have you ever heard of freeze-drying? It’s a process that extends its shelf life, preserving its quality and original flavor. Freeze-drying is a conservation technique that consists of removing the water from food, and the process includes the following steps: 

1. Freezing: The ingredients are frozen to transform them into tiny crystals. 

2. Primary drying: vacuum technology is used to evaporate the frozen water without becoming liquid.

3. Secondary drying: The product is exposed to heating, and freeze-dried materials retain a solid structure.

More about bees

In Mexico alone, beekeeping generates around 100,000 direct jobs and produces more than 57 tons of honey per year. Did you know that in this country, there are about 2,000 different species of bees, 46 of which do not have a sting? Impressive!

The work of apiaries is essential to take care of bees and the production of honey, royal jelly, propolis, wax and pollen, but they also constitute a virtuous circle. At Velas Resorts we promote sustainable commerce and incorporate honey from local producers in our gastronomic offer and in SE Spa treatments.

7 actions to take care of bees

The worldwide population of bees has decreased considerably, and any action taken to protect this species is invaluable; The good news is that we can all help to conserve them while taking care of our own survival.

We share 7 very simple actions that you can take immediately and become, like us, Guardians of Wildlife:

1. Don’t be afraid if they are around

Bees do not usually sting deliberately; they only do so in cases where they feel danger. If you see a bee flying near you, stay away from it. If you are stung by a bee, it will cause only brief pain and swelling, but the insect will lose the sting and, with it, a part of its digestive system, which imminently represents its death.

2. Take care of their home

Finding a hive or swarm near your home or places you frequent can be scary, but there are places you can report them to so they can be moved and relocated in safer environments, for them and for you. Take a look at the directory of associations around the world, in the United States and Mexico.

3. Invite them to lunch!

If you have fruit trees, allow bees to feed on their fruits. It is crucial to avoid the use of insecticides and pesticides. Only if strictly necessary, apply it when the flowers are still closed. In return, the bees will help your future crops.

4. Help them regain energy

If you see a bee walking without enough energy to get back on its way, you can help it by placing a small amount of sugar water nearby, so that the bee regains strength and continues its journey.

5. Plant flowers

If you have a garden or potting area, plant flowers so that bees and other pollinating species can find shelter and pollen to feed on.

According to Greenpeace, the best flowers for them are: facellia, marigold vetch, sainfoin, red clover, alexandrine clover, Persian clover, alfalfa, coriander, cumin, parsnip, dill, borage, rosemary, zulla, sunflower, mallow, marigold, buckwheat, fennel, lavender, and yellow sweet clover.

6. Eat local honey

Bee honey greatly benefits your health as it is a source of antioxidants, helps heal wounds, prevents digestive problems, calms sore throats, and has antibacterial and antifungal agents, among others. By buying honey from nearby beekeepers, freshness and properties remain intact, and your purchase helps beekeepers continue to maintain their hives.

Riviera Nayarit guardians

Particularly in Riviera Nayarit, a very active area in honey production receives, many bees choose Grand Velas to build their hives and combs and take a break. That is why it has been created the Wildlife Guardians program that seeks to protect the hives and swarms to ensure the preservation of these species.

Relocating a hive represents a huge effort, resulting in the loss of bees and a risk for those who handle it.

During your visit to Grand Velas Riviera Nayarit you may notice some wooden boxes installed along the property, which work as “temporary suites” for bees. These shelters —easily identified by the legend “Guardians of Wildlife / Bees resting”— are conditioned with honey and pheromones to attract bees inside. They serve as artificial hives that can be easily moved and relocated, a task we undertake along with apiaries such as AZPER Guardian of life, who carry out the laudable work of rescuing any animal at risk of ending its participation in the cycle of life. They also hold conferences and training courses on topics related to Biology and have an apiary to integrate the rescued bees into resident colonies, surrounded by a natural ecosystem, to continue their work and reproduction cycles.

Apiaries are usually located in arable land, or wild areas with abundant flora bees pollinate. The taste and texture of the honey they produce vary depending on the type of flora they feed on. Apiaries are authentic sanctuaries for bees to remain away from human and vehicular tracks; they provide protection from the wind and extreme temperatures and are a water source for bees. 

Mayan sacred species

Riviera Maya stands out for its endless flora and fauna that we find all around it. There are more than 20,000 species of bees on the planet; within this large number are the native stingless bees, and it is estimated that many have been in the Yucatan Peninsula for 60 million years.

The most representative species in this area is the Melipona Beecheii bee, which stands out because it only harvests the blooms of plants with medicinal properties. The Mayans recognized this and considered them sacred.

A Melipona bee hive produces around 50 fl. oz. of honey in a year, unlike the European bee that produces up to 1,000 fl. oz. of honey in the same period of time. This is a very precious product not only because of its scarcity but also because of the multiple health benefits attributed to it within traditional Mayan medicine.

Their life cycles have been understood since ancient times, and since then, the way of handling them has remained intact, joining the traditional Mayan way of life; the bees are raised near the houses in “jobones” that are hollow trunks with a lid of wood that resembles the natural habitat of the meliponas and where the honey harvest can be carried out.

Grand Velas Riviera Maya has taken the initiative to rescue the native stingless bees or meliponas, creating a Meliponary, which is a special place for the colonies that have been rescued.

To preserve them and take care of their honey production, and as part of the Luxury All-Inclusive Grand Velas stay, the resort offers an experience that invites you to learn more about this incredible specie. The new eco-tour begins with a visit to the resort’s organic orchard, where you’ll learn about the pollination process and the importance of the Melipona bees.

Afterward, Nahúm Velasco, head chef of the renowned Cocina de Autor restaurant, will lead you to a honey tasting that blends flavors and textures from around the world. You’ll also have the opportunity to enjoy a honey and cheese tasting served alongside Velasco’s homemade mead.

What is a cactus?

This plant comes from the desert, and while it mainly grows in arid regions, the cactus has a unique adaptive capacity, surviving in gardens worldwide and areas with different climates. The plant is well-known for its thick stems covered in prickly spines or sharp spikes, but these characteristics have not hindered taking advantage of its benefits.

Origin of the cactus 

The cactus is an endemic plant species in Mexico that also grows in a small area of the United States. Dating back to pre-Hispanic times, it has been an important source of nutrition for Mesoamerican villages.

Additionally, it is said that when the Aztecs were looking for a place to build Tenochtitlán, Huitzilopochtli, the war god, claimed to them that the promised land would feature a majestic eagle perched on a giant cactus called nopalera, eating a snake at the same time.

For this reason, the cactus has become a symbol of national identity, as the eagle on the nopalera is the emblem of Mexico’s flag.

The cactus in gastronomy

Despite its sharp spines, the cactus is a traditional food resource in Mexico. This endemic plant is an ingredient in stews, soups, roasts, salads, and even delicious drinks, among many other culinary preparations.

And as if that were not enough, cactus is one of the healthiest foods you can include in your daily diet since it is high in vitamins, fiber, minerals, antioxidants, and, of course, a significant amount of water. The most common edible cacti are the nopal, pitaya, blue agave, and xoconostle.

Its role in beauty

This desert wonder has also become a beauty trend in skincare, as its extract boosts hydration. Despite having a tough exterior, the cactus contains plenty of nourishing ingredients that support the skin’s natural ability to store moisture.

The fame and popularity of tequila have become global. Proof thereof is the fact that it even has a special day to celebrate its history and taste: The third Saturday of March in Mexico, and July 24th worldwide.

Denomination of Origin

As we shared with you in one of our latest articles, tequila is a 100% Mexican product that has a Denomination of Origin, which means that it can only be produced in some states of Mexico, which are Jalisco, Nayarit, Michoacán, Tamaulipas, and Guanajuato.

Production

The main regulation for tequila’s Denomination of Origin is the raw material for its production, tequila can only be produced with blue agave o tequilana weber, which is cultivated for approximately 7 years. Later, when the agave pineapples are mature enough, harvesters or “jimadores” extract them for its cooking.

The pineapples are separated according to their size and cut into small pieces, then they are placed into steam injection within traditional brick ovens or stainless steel autoclaves, where they will be cooked for approximately 35 hours. Once the cooking is over, they are milled to obtain the juice or must, which is deposited in fermentation tanks.

Finally, the must is distilled and poured in wooden barrels, where it will be aging according to the type of tequila it is; for example, for rested tequila the minimum aging duration is 2 months, while for ultra aged tequila is at least 3 years.

Tequila Sunrise

Ingredients:

• Ice
• 2 oz. tequila reposado
• 4 oz. orange juice
• 1 oz. grenadine
• Garnish: orange slice
• Garnish: maraschino cherry

Preparation:

Pour the tequila and orange juice in a highball glass with ice. Stir well and slowly pour the grenadine so it sinks at the bottom of the glass. Finally, garnish with an orange slice and a cherry.

Paloma Brava

Ingredients: 

• 2 oz. tequila reposado
• 6 oz. orange juice
• 5 oz. grapefruit juice
• ¾ oz. lime juice
• 4 oz. grapefruit or orange soda
• Syrup or honey to taste
• Garnish: lime wheel

Preparation: 

Pour the tequila, lime, orange and grapefruit juices in a highball glass with ice. Add a pinch of salt and stir gently. Top off with soda and pour honey or syrup to taste. Finally, garnish it with a lime wheel.

Sparkling Mango

• 2 oz. silver tequila
• 1 oz. lime juice
• 1 oz. mango pulp
• ⅕ oz. simple syrup
• Sparkling water or Ginger Ale

Preparation:

Put all the ingredients in a shaker, except the sparkling water. Mix them with some ice. Serve in wine glass with ice and add the sparkling water or ginger ale. Decorate with a slice of cucumber and mint leaves.

Rasberry Paloma

• 2 oz. Silver tequila
• 1 oz. lime juice
• 6 raspberries
• Grapefruit soda

Preparation:

Put all the ingredients in a shaker, except the grapefruit soda. Mix them and serve it in a highball glass rimmed with salt. Add the grapefruit soda and decorate with a raspberry skewer.

Guava Margarita

• 2 oz. silver tequila
• 1 oz. Cointreau
• 1 oz. lime juice
• 1 oz. guava pulp

Preparation:

Put all the ingredients in a shaker and mix them a few seconds. Serve it in an old fashioned glass rimmed with brown sugar. Add ice and decorate with mint leaves and an edible flower.

Fresh Agave

• 2 oz. Silver tequila
• 1 oz. elderflower liqueur (St. Germain)
• 1 oz. lime juice
• 2 oz. cucumber juice
• ⅕ oz. simple syrup

Preparation:

Put all the ingredients in a shaker and mix them with some ice. Serve it in an old fashioned glass with ice. Decorate with a slice of cucumber and mint leaves or basil.

Interesting fact: The most expensive tequila in the world

Ley Diamante .925 —Diamond Sterling .925— is the name of the tequila that has been included on Guinness Records as the Most Expensive Bottle of Tequila in the World, with a cost of 3.5 million dollars. The preciously crafted bottle has 4,100 white diamonds embedded and 5 lb. of platinum, which is one of the most expensive metals, and 17 artisans in total were in charge of the manufacturing.

Did you know this tequila was the protagonist of an eccentric pairing with the most expensive taco in the world? The occasion was celebrated in Grand Velas Los Cabos in order to raise funds for Los Cabos Children’s Foundation, summing a grand total of $27,960 dollars collected.
